Homemade Refried Beans
I decided to try my hand at homemade refried beans. It's quite a bit cheaper to buy a bag of dry beans and make it from scratch versus buying the premade cans. Step 1: Prepare dry beans - cover with water in a bowl and allow to sit overnight.
Step 2: Cook the beans - I let them simmer all day on low in my slow cooker. You can also do them on the stove. Basically, you're just cooking them until they're soft.
Step 3: Add butter to large pot. Saute onions until soft and translucent.
Step 4: Add the garlic. Cook for 1-2 minutes.
Step 5: Throw in the beans with just a little bit of liquid (you don't want your end result to be too dry).
Step 6: Add cumin, paprika, salt, chili powder, and black pepper. Stir.
Step 7: Bring to a low simmer and cook for 10-20 minutes, stirring occasionally.
Step 8: Mash with potato masher or blend in a blender until desired consistency is reached. Add milk or bean juice if they seem too dry.
Recipe: 4 cups cooked pinto beans (1 cup of dry = appox. 3 cups cooked) 3 T. butter 1 cup chopped onion 5 cloves minced garlic 2 1/2 t. cumin 2 t. paprika 2 t. sea salt 1/2 t. chili powder 1/2 t. black pepper Milk or bean juice
