Stuffed Zucchini

I tried this new recipe last night and it turned out pretty good. I again didn't get any photos, but it basically looks like a zucchini boat with beef on top. I modified this recipe to fit what I had on hand. Stuffed Zucchini: 


1 zucchini, cored with flesh chopped and reserved.

4 tbsp olive oil

1/2 onion, diced

1 clove garlic, thinly sliced

1/2 lb hamburger

1 egg

1 cup basic tomato sauce (recipe below)

parmesan cheese


Basic Tomato Sauce:

4 tbsp olive oil

1/4 onion, diced

1 clove garlic, thinly sliced

1/2 cup finely shredded carrots

1 can crushed tomatoes

Desired spices

Saute onion and garlic in olive oil until onions are translucent. Add carrots, tomatoes, and spices and let simmer for 30 minutes. Stir occasionally.



Preheat oven to 450 degrees.

Heat olive oil until almost smoking. Add onion and garlic and reduce heat. Add zucchini flesh and hamburger. Cook until hamburger is cooked through. Drain. Transfer to a large bowl and allow to cool slightly. Add egg, tomato sauce, and salt & pepper to taste. Stir to combine.

Place zucchini in baking dish. Pile hamburger mixture in zucchini. I piled it high! Add parmesan to the top. Bake for 20-25 minutes until crisp on top. Serve hot from the oven.
