So far, we've not eaten anything too crazy on our new eating plan. Mostly just lots of eggs, meat, and veggies. I did make these omelet muffins for easy breakfasts on the go, since Peter is always at work during breakfast time and I'm often out and about. I like that they were super easy to make and are very versatile. The ones I made had browned hamburger, red pepper, and onions mixed in with the eggs. I'll be making more this weekend for the coming week. I'm planning to put bacon and sautéed onions in them this time. The recipe says they can be frozen, but I haven't tried that yet. So far, we've been eating through a batch too fast to make it even worth freezing. Also, I don't have any freezer space :P Some of the recipes coming up for this week are spaghetti squash, stuffed peppers, beef burgundy, and cauliflower crust pizza. If I have the time, I'll be taking pictures and posting up each recipe after we make it, with our opinion on how good or horrible it was.
It's quite a bit of fun learning how to cook in a new way, with different ingredients!
