Cauliflower Crust Pizza

I really enjoyed this recipe! If you expect it to taste like pizza, you'll be sorely disappointed, but it was delicious in its own way. There is tons of cheese in it though, which we actually aren't supposed to be eating. I thought we could cheat for one meal, but I probably won't make it many more times. The amount of cheese made it really greasy, which was a bit of a shock to our systems after a week of clean eating. Cauliflower Crust Pizza

1 cup cooked, riced cauliflower 1 cup shredded mozzarella cheese 1 egg, beaten 1 tsp dried oregano 1/2 tsp crushed garlic 1/2 tsp garlic salt olive oil

pizza sauce, shredded cheese and your choice of toppings (toppings must be precooked as they will only be broiled)

To rice cauliflower: 

Wash cauliflower and remove stems/leaves. Grate using a cheese grater of food processer. Microwave on high for 8 minutes.

One head of cauliflower will produce about 3 cups of cooked, riced cauliflower.

To make crust:

Preheat oven to 450*. Grease pizza stone with olive oil.

Mix together cauliflower, mozzarella, and egg. Add in oregano, garlic, and garlic salt and stir until well mixed. Transfer to the pizza stone and spread using a spoon.

Bake for 15 minutes.

Add sauce, meat, and cheese. Broil for 3-4 minutes, until cheese is melted.
